Spicy chicken breast with vegetables and pasta, light recipe

This is a dish very simple and quick to prepare but, being in reality of two dishes to prepare at the same time, it requires a certain amount of coordination and timing.
Nothing transcendental, be quiet!
But a little 'more attention should put it there.

The trick is always to carry on with all the ingredients before starting the cooking; and especially in checking that you have everything at your fingertips.
But I think anyone who loves to devote to the kitchen has already idea of ​​how to behave.

The dish is really worth: very delicate.

Ingredients, per person:

small carrot



small zucchini








chicken breast



black pepper

Clean carrot and zucchini and slice them: a good mandoline is a great help.

Open the chicken breast in your pocket or full, season with pepper and salt and then fill it with chopped herbs already prepared. Close it by finger pressure.

In a bowl, prepare the final dressing by mixing together the tomato paste, thyme, harissa and a half ct of oil; it will then be completed with half a cup of the pasta cooking water.

Boil water for pasta.

Heat a non-stick frying pan with oil half a ct and meanwhile throw the pasta in boiling salted water.

Cook the chicken breast in a pan over medium-high heat for a couple of minutes, coloring it on both sides; then continue cooking for other 8 'over low heat and covered pan.

When three minutes are left to complete the pasta cooking, add the sliced ​​vegetables (carrot and zucchini) to the pot.

Before draining the pasta, use half a cup of cooking water to complete the condiment bowl.

Strain the pasta with the vegetables, add it to the pan with the chicken, raise the heat adding the sauce in the bowl.

Continue cooking for another minute to blend the flavors.

Cut the bias chicken breast into three or four slices and place it in the dish along with the vegetables.
