When as a child I saw people coming to the table this huge tray of golden balls went into raptures!
It was one of my great passions.My mother prepared them exclusively with fresh meat while my grandmother, more traditional, also mixed any leftovers of cooked meats.
But the important thing, for me, was that they were beautiful breaded meatballs.
Diplomatic cream
This sumptuous cream, used in pastry making for cakes and pastries, comes from the union of two equally famous creams.
This is one of those foundations that I use often and which, regularly, I have not yet documented the preparation.

Spaghettata taste sea ...
(Livorno?)
The other day I had prepared and put on the table a plate of Livorno codfish, my passion for the taste that goes along with many accompaniments (from pasta to polenta) and also for the relative simplicity and cost-effectiveness of implementation.
However, despite the effort to try to eliminate all traces of sauce from the pan, there is still a fair amount of it.
A sauce like that, rich in tomatoes, spices and pieces of fish could not be wasted!
A first course almost on the fly:
fusilli with peppers
At the bottom of a dish that is very reminiscent of a typical dish of the cuisine of recovery: the pasta with peppers sauce (Advanced ...).
In this case, however, with the peppers browned at the moment and left still slightly crisp.
The result is a very tasty first course!
On Sundays, there are guests or not, I always try to put on the table something special.
Something that, besides being good, is beautiful to look at and different from everyday cooking when, alas, time does not always leave us room to make the table we want.
All without necessarily putting your hand to the wallet!
