Some of the recipes I prepare at my home and also at friends' homes.
Plates I liked and learned to prepare, adapting to my taste and needs.
Ma ... attention:
my recipes are in my own way and they don't necessarily respect traditional canons;
also because, on certain classic preparations, each village and each family have their own original version!
On this page, from day to day, a new or revised recipe may appear;
but also the story of a lunch prepared or eaten in company.
Just like some curiosity ...

Chinese steamed stuffed mushrooms, Chinese cuisine
(Shitake with shrimp, steamed)
One thing that I really love about Chinese and oriental cuisine in general is the wide variety of preparations that are presented on the table, especially when it comes to dimsum. And sometimes there's even a little secret that helps increase the look and variety of these appetizers.
Take for example these typical dried mushrooms steamed with a delicate shrimp filling.
Shizitou (狮子头) - Stewed pork balls
Shizitou (狮子头) - Stewed pork balls (Chinese cuisine)
Shizitou, literally lion heads, because the meatballs that emerge from the cabbage ideally represent the lion's snout that stands out among the thick mane of the feline.
It is a fairly consistent dish suitable for the cooler seasons; but nothing prohibits serving it even at other times of the year: it is always highly appreciated.
Baozi (Bun), Chinese bread, steamed stuffed
these sandwiches Chinese are often served in tea houses, together with fried rolls and ravioli of different types, steamed or sautéed.
When I was with relatives in Hong Kong there was no lack of a day when we didn't go to one or another tea house for lunch!
Baozi with vegetables - (蔬菜 包)
Chinese steamed bread with vegetable filling
This is another version of Baozi I have already presented (baozi with chicken and mushrooms), a version with vegetables; although due to the presence of dried shrimps it can not be called a vegetarian version
(the variant without shrimp is shown at the bottom).
Among the Chinese steamed buns that I prepare is usually the one most appreciated by my guests, perhaps for the very delicate flavor and unusual at the same time.
Making good croissants at home is not very easy:
the procedures are very long, complicated and require a very expert hand, let's say almost professional.
But, however ... for some time I have been preparing quick puff pastry with excellent results and recently I wanted to apply the technique of homemade pastry by Iginio Massari preparing croissants.
It worked wonders!
