Given the vastness of China, it is difficult to say when a plate of a border area is really Chinese or foresto!
I do not point to many specialties, only those that are often easy to find from me; dishes that I have been eating for many years now.
Dishes that are always successful with my diners.
After all, I had good teachers.

- As I prepare them, other specialties of the middle empire will follow. If anyone, however, wanted to know how to prepare a dish in particular ... well, if it is one of those I prepare I will do to do it now!
- At the time of writing (November 2013) I can guarantee that it is not season for me to prepare the Peking lacquered duck: I prefer to use the oven in the garden, to do it!

This chicken with peppers is one of those dishes that are found in all Chinese restaurants and, unfortunately, I rarely found it prepared to perfection.
This is my version, I learned on the spot and by the experts.
At my guests have always liked, very much!
Curry puff, puff oriental curry
Yesterday, while I was preparing this little treat for the birthday of a friend from Bern, I was surprised to do some accounts: I have been preparing these for almost forty years curry puff!
And in all these years, I have prepared them at home or for parties; and continue to be successful.
Homemade sweet and sour sauce, oriental cuisine
This sauce, great to accompany grilled meats and much more, is a very simple version of the sweet and sour sauce that I generally use to season the chicken (or pork) in sweet and sour sauce, and that can without problems replace enriched with vegetables.
