Given the vastness of China, it is difficult to say when a plate of a border area is really Chinese or foresto!
I do not point to many specialties, only those that are often easy to find from me; dishes that I have been eating for many years now.
Dishes that are always successful with my diners.
After all, I had good teachers.
or diǎn xin (literally: put a dot on the heart) that is a set of buffets, appetizers and snacks.

- As I prepare them, other specialties of the middle empire will follow. If anyone, however, wanted to know how to prepare a dish in particular ... well, if it is one of those I prepare I will do to do it now!
- At the time of writing (November 2013) I can guarantee that it is not season for me to prepare the Peking lacquered duck: I prefer to use the oven in the garden, to do it!

For the series China is the kitchen Here is another recipe that I had prepared for the last lunch with friends on the terrace, the first Sunday of autumn.
The sweet and sour preparations are certainly among the most popular and best known is probably that of the sweet and sour pork.
This time I proposed, however, with the chicken.

Dried shi-take mushrooms and bamboo are among the best-known ingredients in Chinese cuisine.
Ingredients that go well with different types of meat; and not only.
Stir-fried with bits of chicken are one course ubiquitous in Chinese restaurants in the West.
And even in my kitchen, I am never unwelcome.

One thing that I really love about Chinese and oriental cuisine in general is the wide variety of preparations that are presented on the table, especially when it comes to dimsum. And sometimes there's even a little secret that helps increase the look and variety of these appetizers.
Take for example these typical dried mushrooms steamed with a delicate shrimp filling.

Shizitou, literally lion heads, because the meatballs that emerge from the cabbage ideally represent the lion's snout that stands out among the thick mane of the feline.
It is a fairly consistent dish suitable for the cooler seasons; but nothing prohibits serving it even at other times of the year: it is always highly appreciated.
