Una caprese at lunch!

A caprese lunch!

Today was a wonderful end-of-summer day; around lunchtime in the garden they touched thirty degrees ... in short, everything invited to a light lunch and with all the flavor of summer!
The ingredients were at hand and so I am prepared a beautiful caprese salad ...

The tomatoes and basil from the garden and a very tasty buffalo mozzarella from the Emmental: yes, in the green of the Emme River valley, in addition to cows ranging from grassland to mountain pastures, there are also buffaloes, summer and winter, to remain plan.
Milk production is limited and mainly seasonal. And even the mozzarella that is produced has a very limited distribution to a maximum of about twenty kilometers from small local dairies.
But I can assure you that it is a phenomenal product.

And so I made the sliced mozzarella, cherry tomatoes into wedges and I topped it all with basil, extra virgin olive oil (Crete) and an idea of salt and pepper.
The result was definitely very tasty despite the fact that Capri and its surroundings were just the name!

NOTE:

For those who were not entirely convinced of the real existence of this production in the Emmental, I can suggest the reading of this article appeared on IL GIORNALE in the 2006!
