Saltimbocca, chicken, rolled
With a chicken breast can be proposed many preparations.
For example this fast variation of the typical saltimbocca (chicken, however) presented in another way.
I do not know why ... but the children of friends are always fascinated!
It is also an excellent idea for a simple dinner at home, just to put something on the table looking more intriguing than usual.
The normal portion is two rolls per person but, for the photos, even a single roll in the dish was fine.
Ingredients, for two saltimbocca:

Preparation:

Flatten the chicken breast (about D. 150) and make two slices.
Salt and pepper, then cover with a sage leaf and then the slice of ham.
Roll, fasten with a toothpick and gently flatten with your fingers.
Preheat a medium high heat the clarified butter and brown well on both sides of the rolls.
Sprinkle with white wine, cover and continue cooking over medium heat for a few minutes.
Serve accompanied by some of the cooking sauce and vegetables;
possibly, as in the picture, steamed broccoli with oil and lemon.

- If salt and pepper are added enough during the preparation, it is sufficient to only a small addition of salt towards the end of cooking.
- The chicken breast can be replaced by two steaks made from chicken legs.
