A plate of pasta and chickpeas
When I was a kid (more than fifty years ago) there was a neighbor, Mrs. Mercurio, who prepared excellent and unattainable pasta and chickpeas.
And knowing how much my mother and I were greedy there carried on a portion or two!
Many years later, wanting something different to the table, I put together a version quickie and unpretentious:
He was so successful that still is often asked me today.
The dolmadakia (ντολμαδάκια) On the table!
In these pages I often speak of my passion for Greek cuisine and I also delight in repeating some of the recipes that I have been taught.
And a month ago a friend (Paolo O.) pointed out to me that, despite having presented once again the photos of my table also accompanied by dolmadakia (ντολμαδάκια), I've never published the recipe ...

Orecchiette with Catalonia,
a classic table
Orecchiette are a type of pasta that is a perfect accompaniment to vegetables;
from the classic version with turnip tops to broccoli.
But not only and, when I find it here, they are also excellent with the catalonia!
Garlic, peel it without problems
Peeling garlic is always a nuisance, at least for me.
But, when you need it to be, you have to peel it!
For many years, however, I have found a very simple, fast and decidedly economical solution, like those of the series:

As a boy I happened to eat, repeatedly and always excellent, pasta and chickpeas prepared by a neighbor.
