Cod bites with dried cherry tomatoes

Cod is one of those fish that adapt to many preparations and, especially, that always manages well!

In this recipe I wanted to prepare it in small pieces and accompanied by the scent of dried cherry tomatoes in order to cook it quickly, still obtaining a tasty and colorful dish.

Clearly I, here in the middle of the mountains, find cod more easily frozen than fresh; but always with a very rich choice.

Here I used the fillets obtained from the final part of the cod, in practice the tail, because it is a part that flakes very little and is therefore ideal for a preparation that is turned over several times in a pan.
(and by the way it also costs less ...)

And now, starting as always from the ingredients, let's start cooking!

Preparation:

Desalt and fillet a salted anchovy, obtain two fillets.

Cut the already cleaned cod tail fillet into small pieces.

Heat the olive oil in a non-stick pan and add the mixture of chopped fried vegetables (perhaps those from the stock prepared in advance ...), the anchovy fillets and the finely chopped garlic clove (or, better yet, squeezed).

In the meantime, season the cod with salt and lemon, then dry it well and flour it.

Scroll the excess flour with a sieve.

Add the cod bites and color them well.

Sprinkle with white wine, dry on high heat and then complete with chopped dried tomatoes, cherry tomatoes and capers.

Season with salt and pepper, cover and continue cooking over medium heat for about five minutes.

Sprinkle with parsley, mix gently and distribute on plates accompanied with plain rice or, as in the photos, curry.
