Monkfish grilled with capers and tomatoes seal

In spite of the high-sounding name it is an extremely simple dish;
simple but embellished by the presence of a good fish fillet.

THU the monkfish, precisely, whose flavor and consistency are emphasized by a hot seal and immediately ready.

Clearly, monkfish can be replaced by a nice slice of tuna, just seared, and also by a good cod
(possibly not fillet because it unravels easily).

The procedure remains the same.

Ingredients, for 2 people:

fillet of monkfish, approx. g 350
extra virgin olive oil CT 1
salt and pepper QB
- For the gasket
capers CT 2
Cherry tomatoes pz 8
anchovy fillets 2
salt and pepper QB
balsamic vinegar ct 2

Preparation:

Open the fillet along the central part, flatten it with your hand and make two beautiful slices, like escalopes.

Season with oil, salt and pepper, leaving them to marinate for half an hour.

Meanwhile wash and cut the tomatoes into wedges, desalinating an anchovy and cut two threads (or use two fillets in oil ...), rinse the capers in salt (or drain well of pickled capers).

Heat the grill and just toasty carefully lay down the monkfish slices
(if you use a contact grill, as in the pictures, in the first few minutes it must be closed in a raised position: it must not flatten the fish!)

Meanwhile, in a skillet heat the olive oil with the anchovy fillets;
just begin to melt add, raising his high flame flame, the tomatoes into wedges, capers and then deglaze with the balsamic vinegar and then adjusting with salt and pepper
(attention: anchovies and capers are already salted, even if rinsed).

After three or four minutes carefully turn the fish slices (if using a plate) and, if you use the grill in contact (as in photo), close it.

After another couple of minutes the fish will be ready (it must not overcook, important) to be transferred to the plate and covered with the hot topping.

If you want you can complete the dish with spinach seared in a pan with butter or other vegetables according to your taste.
