(choux pastry for everyone)

Who has never wanted to have a nice tray of cream puffs on hand, perhaps covered with a nice chocolate glaze?
While we're at it, we could also add some éclairs, profiteroles or some other preparation that requires choux pastry!
There are countless variations on this dough; I have indicated this one which, in my opinion, is the simplest and almost foolproof.
