Sfogliatelle svelte apricot

 The apricot puffs!

The puffs, the real ones, are good, very good!
Of course also very challenging to prepare.

I, in my home kitchen, m'azzardo not even trying.
However, if you want to offer your friends something great, I can always prepare these puffs svelte!

Enough of the puff pastry ready (but it's good!), The melted butter, a bit 'of time available and, above all, patience!

For the filling, then each individual as to what to use:
the classic semolina cream (similar to the one used for the strudel with apricots), a custard or a jam.

In those that I propose here, I used my apricot jam in the Valais:
I still have some jars in the pantry!

So, starting as always from the ingredients, let's start the preparation!

Melt in a saucepan or in the microwave of the butter.

Spread the first roll of puff pastry, further spread with a rolling pin (to prevent attacks, cover it with a sheet of parchment paper after lightly dusted with flour).

Brush the first half of butter, cover with the second pressing with his hands to make it stick, then brush it butter and prepare in two parts (further stretched) the second sheet.

Arrange another piece of dough over the two ready, brush with butter and cover with the last one.

Cover with a sheet of parchment paper and gently move a couple of times with a rolling pin to make it adhere well.

further Brush butter and begin to roll up tightly.

Now wrap in parchment paper, place in a bag suitable size from the fridge and put to rest in the freezer for an hour (not too far or become hard as a brick and difficult to work!).

Preheat the oven (static) to 220 ° C.

After one hour to support the roll on the counter and begin to cut with a knife disc of a centimeter thick.

Aid of spinning the discs between the fingers, pull it towards the outer edges of the disc while with the other hand you push down the innermost points; up to get a basket.

Prepare all the baskets start to fill them one by one jam or a filling of your choice then gently closing them at the edges.

Place them on a baking sheet lined with parchment paper.

When they are all ready, just brush them with butter and sprinkle then just granulated sugar.

Bake for about 20 '.

Remove from oven, sprinkle with powdered sugar ...

... and move them, with the baking paper on a wire rack to cool them better.

Arrange them elegantly on a tray and time the necessary time to be brushed away!

(I managed to make the final photos ...).

Buon appetito!
