Of all the variations of this classic cake that's what I prefer.

Mix well, using the same procedure of simple pastry, ingredients for the dough and put it in the fridge for at least half an hour.
Gently mix the quark, sugar, egg yolks, cornstarch, lemon zest, softened butter and,

Let cool on a wire rack to cool before opening the cake pan.
Serve cold.
