Tiropitaki

For these pastries you just need a few ingredients at home:
an egg, less than two ounces of feta, some spices (dill or oregano and parsley) a little puff pastry and ... off you go!

And they are also excellent the next day, warmed up again.

Tiropitaki, literally “cheese sandwiches or pastries”, from thyropita which is the big sister, a typical Greek pie.

Preparation:

First crumble the feta cheese with a fork and mix with the egg and spices. 

 

Roll out the puff pastry, cut it into squares of about ten centimeters and spread the filling. 

 

Close one end on the other, forming triangles; with the help of the back of the prongs of a fork to tighten the edges well and create a small decoration.

 

 

Eventually, before baking for 25 'at 190 ° (lower heat with air circulation) brush the tiropitaki with oil or beaten egg. As soon as they are ready, place them on a rack to cool for a few minutes.

Nothing prevents you from cutting the puff pastry into discs, with a pastry cutter or even distributing the filling in well-spaced piles on half of the pastry, cover with the other half by pressing well to separate the piles and divide everything into squares once cooked. . 
  • An alternative to these cakes is the preparation of a "tiropita" in a round or square pan; in the same way as a savory pie. 
  • In addition to the puff pastry you can use, if you have them, the pasta filla; or even very thin bread dough. 
  • In one of Claudia Roden's beautiful books on Mediterranean and Middle Eastern cuisine (A New Book of Middle Eastern Food - 1968 and later editions) I found, and tried, another filling, much richer and tastier: an excellent alternative.
