The Obazda (or Òbazter, depending on the area) is a very tasty cream that can be said to never be missing in Bavarian breweries as a complement to a nice mug of beer. or a glass of wine!
Usually served with a basket of fragrant slices of rye bread ready to be covered with this specialty.
Every place (and every family) has its own version…
I suggest this one to you; the quantities and types of aromas are very variable and even the Camembert, for those who want a more delicate flavour, can be replaced by a well-aged Brie.
All that's left to do is, starting as always with the ingredients, start preparing it!

Half an hour before starting, cut the butter into pieces and take it out of the fridge to soften.
Cut the Camembert into irregular cubes (it will tend to squish but it doesn't matter: it will be reduced to a cream anyway!).
In a bowl, cream the butter and then add the Camembert.
Continue to work the mixture with a fork until the mixture becomes a coarse cream.
Finish by adding salt, pepper, paprika and beer (or wine) and work briefly again to distribute them into the cream.
Personally, I taste it every now and then to see if I need to add some more seasoning…
If you want, you can add diced onion and other spices according to your taste.
Bring to the table.
You can decorate the bowl with a sprinkling of paprika, red onion rings or pretzels.
The important thing, then, is to have a good Bavarian rye bread on which to spread the cream…
… and devote yourself to biting into these canapés accompanied by a good beer!
Prosit!

- The quantities of the ingredients can be doubled at will: it just depends on how many people there are and the bread available.
