Strips of chicken with tomato sauce

The meat with tomato sauce is a classic, at least in my house:
My mother often prepared (in his way) to Sunday.

In the most typical version, it is proposed using beef.

I offer it here with the chicken strips.

More modest but just as tasty: try it!

The preparation itself is not complex; There are some small steps that can, however, turn into Mr. plate: the slices must be flattened well, they must be cooked quickly.

And to give more flavor to the meat, it is advisable, just after having beaten it, season it with a little oregano, EVO oil, salt, pepper and if desired, an idea of ​​squeezed garlic.

Now all you have to do is collect the ingredients and start!

Ingredients for two persons:

chicken breast ca. g 200
Origan ts. 1
extra virgin olive oil q.s.
salt and pepper (black) q.s.
garlic cloves 3
peeled cc 200
tomato concentrate TS. 1/2
chopped parsley q.s.

Obtain some slices from a chicken breast and then flatten evenly with a pestacarne.

Dress them, as mentioned above, with a little oregano, extra virgin olive oil, salt, pepper and if desired, an idea of ​​squeezed garlic;
then let them rest while preparing the sauce.

Heat oil in a saucepan and add the 'garlic, peeled and just crushed with the plate of a blade.

As soon as it starts to brown add the peeled tomatoes (this operation should be done by removing the pot from the fire for a moment: it will avoid splashing everywhere!) and mix by breaking them not too much with the ladle and complete with tomato paste, oregano, salt and pepper.
Cook for a few minutes so that all the flavors are based.

Heat a nonstick skillet; blanch the chicken strips on both sides:
they will be almost cooked in a couple of minutes.

Cover them with hot sauce, seasoning leave on the fire for a minute adjusting, if necessary, salt and pepper;
season generously with parsley.

Serve immediately in the dishes accompanying, for example, with tagliatelle (they will suck the sauce that is a pleasure).
