Engelsaugen - Eyes of Angels

Engelsaugen

It will be for the contrast of the filling of bright red marmalade with the pale yellow shortcrust pastry but these biscuits already to see them immediately jump to the eye!
I never prepare so many because to see them in front of me, knowing I have enough for the bags of gifts, I would go on to eat them ...

Also this dough, like various others used for Christmas cookies, is a variant on the eternal theme of short pastry; and like all these doughs it is quite fearful of the heat: so fast processing, an adequate period of resting in the cold and a fairly rapid final processing before baking.

Fill each ball with a teaspoon of red currant jam diluted with a little 'honey.

  • (about 75 cal / piece)
  • Note: instead of just honey, use half honey and half sugar: the dough will be sweeter.
  • Taking advantage of a beautiful day and mild temperatures (in the picture, -2 °) instead of working in a room with open windows you can directly work outdoors!
