Apple Pie: The apple pie from Lorenza

 The apple pie from Lorenza

My friend Lorenza, dear Signora Foggiana, is an inexhaustible source of recipes.

What sian sweet or savory, all recipes that generously makes me participate and that I immediately put myself to try in my kitchen!

Like this excellent apple pie.

Of this cake, as of several other preparations, he showed me in person when, together with a friend, he came up here, north of the Alps, last spring.

Then, knowing that, well or badly, I too can untangle myself in the kitchen, the recipes that I pass are very essential; like this…

***

My apple pie:

  • 5 renette apples
  • 3 whole eggs
  • 200 g. of sugar
  • 70 g. of soft butter
  • 1 glass of milk
  • 200 g. made with flour
  • 1 sachet of baking powder

After making the dough, pour half into the mold, after having placed the apples cut into wedges, pour the remaining mixture, then again the apples and finish with a sprinkling of sugar so that cooking remains a bit 'caramelized. ... slurp!

Before starting: remove the necessary butter from the fridge, otherwise mounting it with sugar will not be easy!

Grease a ring pan and then sprinkle with breadcrumbs carefully.
(I then keep it cool until it is time to use it)

Peel the apples, remove the core and cut into wedges: at least eight segments, but having a good cut, even more.
Put them in a bowl with a little lemon juice so they do not blacken.
(wanting with a pinch of sugar and, for the sweet tooth, an idea of cinnamon!).

Preheat the oven, static, to 180 ° C.

In a bowl, by hand or with an electric mixer, whisk the butter with the sugar.

Add one at a time and wait for each egg to mix the eggs well.

Pour the milk and continue to mix thoroughly and quickly.

Mix the flour with baking powder and sift it.
Then, continuing to mix - but now gently - the dough, add it little by little to the rest.

Pour about half of the dough into the cake tin and distribute just over half the apple slices.

Be careful not to cover apples to the center but leave the central part free of apples: the slices will be much better!

Cover with the rest of the dough and decorate with the rest of the slices all in the round.

Sprinkle with sugar (when cooked will caramelize giving a special touch to the taste).

Bake at 180 ° C in a static oven for 40 '.

At the end of cooking, check with a little stick that the cake is well cooked (in particular in the center).
If necessary continue cooking for a few more minutes.

Remove from the oven and allow to cool before slicing.

It is a great cake both for breakfast as well as for a snack and after dinner.

Absolutely to try!

Enjoy your meal.
