Ricotta ice cream

The ice cream ricotta!

If you own ice cream must be ... that ice cream is!
But a different ice cream, however, home-made and easy to prepare; no ice cream or continuously disturbing.

A very simple idea for when there are so many children for a snack.
And, especially, an ice cream without surprises.

To this ice cream, in its simplest version, it simply takes the ricotta, icing sugar and mix well with a whisk (electricity, possibly).
It takes about ten minutes and you're done: you do not need to shuffle it every now and then as you would for the creaming of a normal ice cream.
A couple of hours in the freezer and is ready for use.

Nothing else.

Wanting to prepare a richer and more flavorful version, the one that usually I prepare myself, just a few more things.
Here's how, starting as usual from the ingredients.

Ingredients:

ricotta cheese

Preparation:

Mix with electric mixer ricotta, icing sugar and vanilla until creamy smooth.

Meanwhile, in a double boiler, whisk the egg yolks with the sugar (v. Note) Until creamy.

If desired, add a tablespoon of milk (or yogurt), yet continue a couple of minutes in a double boiler and add the ricotta will be now reduced to a soft cream.
Mix well and place in the freezer for at least two hours.

Since it is not necessary to stir it every now and then as for a normal ice cream or sorbet, it will be ready for use.
Use it like a normal ice-cream.

ADVICES AND NOTES:

Google ads

  • The (nearly) pasteurization of the eggs in a water bath, Carrying them over a certain temperature, avoids any unpleasant drawbacks data from raw eggs. Volendole use raw, add them directly to the cottage cheese and replace the granulated sugar with an equal amount of powdered sugar.
  • A much richer ice cream you can get it by replacing the simple eggs and sugar cream with an eggnog: mouth-watering!
  • Clearly it is also possible to prepare even without adding the eggs (in this case, increase the sugar that does not go into the eggs with an identical amount of powdered sugar in the dough).
  • This ice cream can be enriched and varied by chips of chocolate, almonds or crushed hazelnuts or even fresh fruit: I love it with strawberries!
