Tiropitaki

cover S

For these pasticcetti enough to have at home a few ingredients: one egg, less than two ounces of feta, spices (dill or oregano and parsley) a bit 'of puff pastry in the oven and ... go! And they are also excellent the next day, warmed again.

Tiropitaki, literally "pasticcetti sandwiches or cheese", from "tiropita" which is the older sister, savory tart of Greece.

Preparation:

First crumble the feta cheese with a fork and mix with egg and spices.

Roll out the puff pastry, cut it into squares of about ten centimeters and spread the filling.

Close one end on the other, forming triangles; with the help of the back of the prongs of a fork to tighten the edges well and create a small decoration.

If necessary, before baking for 25 'in 190 ° (lower heat with air circulation) brush the tiropitaki with oil or beaten egg. When ready place them on a grid to cool for a few minutes. Hot are great!

ADVICE:

  • - In the pictures above, these cakes were prepared by folding the squares of filled pasta into triangles. Nothing prevents you from cutting the puff pastry to disks, with a coppapasta or even to distribute the filling to piles well spaced on half of the dough, cover with the other half pressing well to separate the piles and to divide the whole to squares when cooked .
  • - An alternative to these patties and the preparation of a "tiropita" in a round or square pan; the same way as a salt cake.
  • - In addition to the puff pastry can be used, if you have them, the filla pasta; or even of very thin stretched bread dough.
  • - In one of Claudia Roden's beautiful books on Mediterranean and Middle Eastern cuisine (A New Book of Middle Eastern Food - 1968 and subsequent editions) I found and tried, another filling, much more rich and tasty: great alternative.

Finely chop the onions and sprinkle with salt. Leave to drain in order to soften. Then mix the crumbled cheese and other ingredients. Tiropitaki prepare and cook as usual.
