My magic freezer

I cook a lot, and in particular prepare different things that require some time, work and patience. Just think of a good soup or sauce. And only prepare the minimum amount I need at a given time would be a great waste of energy.
The freezer is my salvation.
And not just to store the things I prepare in good quantity but also for some basic preparations to be ready in a short time. Let's say that a friend of mine comes home for dinner: a risotto is the solution but ... it takes the broth. And so a run downstairs in the pantry, out of a container of broth (of the necessary type, vegetable or meat or other ...) and, over time that the onion browned, the broth thaws on the fire!

Or maybe it's that relative who loves my gnocchi with meat sauce? A bag of homemade gnocchi in the freezer there is always; and as well a sauce container.

Of course I also have a normal freezer in the kitchen, in the column where there is also the normal refrigerator (not that of beers that is always strategically placed near where I find myself to relax ...) but not enough for everything.

I do not think it is necessary to give instructions on how to preserve food in the freezer: there are manuals and websites who can do better than me. Only one minor problem: dumplings, stuffed pasta, dumplings and other preparations of this kind can be arranged well spaced on the trays sprinkled with semolina, closed with a plastic bag and freeze events in drawers for fast freezing. The next day will be made, already portioned, in bags or containers for the freezer.

TIPS

I prepare well as large amounts of clean vegetables, cut and, if necessary, boiled for soup. And after being frozen in trays do me many beautiful bags of soup to the many vegetables ready for cooking!
