In my kitchen there are recipes that, although inspired by oriental cuisine, are not the reference to a specific preparation, learned from a manual or taught to me.

These are dishes that, born of whole plant on my stove, want to be my homage to oriental cuisine ...

Like this prawn curry!

After all, many preparations with an exotic look and scent are born not only from the ingredients and spices used but also from the techniques with which they are prepared and then presented on the table.

So, starting as always from the ingredients, let's start cooking!

Ingredients for two persons:

long grain rice (Basmati type)

Preparation:

Cook the rice following the bai-fan recipe and replacing the water with the vegetable broth and adding a CT. of dried grated coconut.
Complete with butter flakes at the end of cooking, stirring gently.

Clean and shell the prawns by opening the shell on the back in order to more easily eliminate the intestine (the thick black line) that runs along the back.

To make the plate look more varied, cut some of them into three or four logs.

Brown them in a pan with a little curry and butter to taste. until they are completely red.

Remove them from the pan and keep them aside, preferably warm.

In the same pan, add more butter if necessary and fry the onion into large pieces. As soon as it starts to soften, add the pepper (red or green: not yellow, it would blend with the curry!) And season with salt and pepper as well as a pinch of curry.

As soon as they are cooked to your taste (I love the slightly crunchy pepper…), put the prawns back in the pan and complete with the remaining curry and Greek yogurt until everything is combined in a thick sauce (a couple of minutes will be enough).

(if you like, add a handful of soaked and well-squeezed raisins at this point)

Remove from the heat and sprinkle generously with chopped parsley (or coriander if you like).

Distribute the rice arranged in a crown on each plate and place the prawn curry in the middle!
