GLi Spitzbuben: the scamps!

Of these jam biscuits there are many versions, all more or less rich versions of a classic short pastry.
I prefer this simple and quick to prepare.
And, to listen to the children of my neighbors, excellent!

Although for the sweets of this period of the year many spices are allowed, I wanted to avoid, for these biscuits, all that wealth of aromas that characterizes many other sweets prepared in this period; after all they are flavors that are already present in the other biscuits!
Only lemon peel (or orange, for those who prefer it) and vanilla: I like it a lot.
And, as with all these doughs, it is always the rule to work them cold.

The classic version would like the dough to be worked by hand on a work surface. But it also comes perfectly with the mixer: it will take a longer rest time.
Pour the sieved flour into the planetary, insert the whisk for the soft dough, add the egg yolks with lemon zest and, while it begins to knead, gradually add the sugar already mixed with the vanilla.

Add little by little the dough pieces of butter and continue stirring until dough is soft, smooth and homogeneous.

Put the dough, wrapped in aluminum (or, even better, in plastic) to rest in the refrigerator for an hour and a half.

Divide the dough into three or four pieces and begin to roll them out with a rolling pin on the floured counter. The dough should have a thickness of three millimeters. Cut out with the stencils of the rings ...

... and as many disks; then place them on plates already covered with parchment paper
Bake at 180 ° (160 ° if ventilated) for about 10 '.

Remove from the oven and place on a table covered with tea towels to cool. When all the discs are ready, begin to smear them with red berry jam (ideal raspberries or blackcurrants, possibly diluted with a little honey),

cover them with the rings making a very slight pressure to make them stick (if you press too much there is a risk that the rings will break - tried and tested!) ...

... and sprinkle with icing sugar.

Leave them to dry completely for a day on the tea towels and then put them in metal boxes.
