Apricotspie - Sfogliata stuffed with apricots
Return home on Saturday night from a cycling holiday I immediately found an invitation to lunch for Sunday from the neighbors!
But you certainly can not present empty handed ...
I found some ingredients in the fridge, I added a little imagination and good will and here is ready, just for midday, a nice puff pastry with apricots!
Nothing really special or complicated; just something that was good and suitable for a very hot day.
I took a puff pastry from the bakery, apricots and an apple: that's all!
In practice I am limited to slicing very thin (with the mandolin) an apple and I mixed it with the apricots in small pieces, lemon juice, sugar and cinnamon.
I spread the dough, I spread it with jam and I put a layer of ground almonds for background.
So in the oven and then the table!
It was not much ... it was definitely good!
